Mondul Estate was founded in 1931 and acquired by Burka Estates in 2007. It is a 211‑hectare farm located on Mount Mondul, about 25 km from Burka in the Arusha region of northern Tanzania — the heart of Maasai land.
Ripe cherries are delivered to the processing station within six hours of picking, where they are sorted and run through a Pinhalense machine that removes the skin and pulp. They are then placed into water tanks. Mondul has its own natural spring that supplies the station with water, which is recirculated before being discharged into soak pits. The discarded cherry pulp is mixed with worms to produce organic fertilizer that is later reused on the farms.
The parchment (the stage of the coffee bean after wet fermentation) is then sorted, thoroughly rinsed in washing channels, and placed on raised African beds to dry. Drying typically takes up to seven days until the moisture content reaches 12%. The coffee is turned regularly, especially during the first 48 hours, to ensure an even drying rate. Once dried, the parchment is transported to Moshi for hulling, packed into bags, and then shipped to Dar es Salaam for export.
Burka maintains its own on‑site cupping lab, where the quality of processed lots is checked daily.
