The Gititu washing station is part of the Aghuti Farmers’ Cooperative Society, and more than 800 smallholder farmers deliver their cherries here daily during the harvest season. The cherries are carefully sorted by quality, and farmers are paid based on the weight of cherries within each quality grade.

In the 1930s, the Kenyan government commissioned Scott Laboratories (SL) to develop coffee varieties that would be stronger and more drought-resistant. While SL28 did not achieve the highest yields, it became renowned for its outstanding cup quality—featuring fruity and citrus notes, along with the complex and sweet profile that is characteristic of Kenyan coffee.

With the washed process, the cherries are first pulped to remove the skin and fruit. The remaining green beans, still covered in mucilage, are then fermented for several hours to help break down the remaining fruit layer. After fermentation, the beans are thoroughly washed with water to remove any residual sugars. The coffee is then dried in the sun on concrete patios or raised beds. In some cases, mechanical dryers are used when weather conditions are not suitable. Coffees processed this way typically have a cleaner cup profile, higher acidity, and pronounced fruity notes.
