Flores is one of the most fascinating coffee islands in Indonesia. The Bajawa region in Ngada lies at high elevations on the slopes of active volcanoes, where the soil is rich in minerals and organic matter. These conditions give the coffee its characteristic depth and complexity, and in recent years producers have increasingly experimented with new processing approaches. The name Laga Lizu means “above the clouds,” referring to the mist-covered mountain farms where cherries ripen slowly and evenly.
This lot is produced by smallholder farmers who manage tiny plots, often less than one hectare. Coffee is grown traditionally, under shade trees and alongside other crops, supporting natural biodiversity and soil health. Coffee cultivation is deeply woven into daily life, with knowledge passed down from generation to generation. As the focus on quality grows, farmers are increasingly committed to selective picking and more precise processing, which has a significant impact on the final cup profile.
The coffee is processed using the anaerobic honey method, which combines oxygen-free fermentation with partial mucilage retention. After harvest, the cherries ferment for 72 hours in an anaerobic environment. The remaining mucilage is then removed, and the beans ferment for another 72 hours. Drying takes approximately 7 days on raised beds, ensuring even drying and a clean, refined flavor.
