Pascual Jimenez is the second generation of coffee producers with a long family history in Buena Vista. His washed Bourbon has a floral character with citrus acidity complemented by the sweetness of milk chocolate.
The cherries are handpicked, and a pulper is used to remove the skin and pulp. The coffee is washed with clean water and passes through a sorting channel, which separates it based on density. The parchment coffee is then further dried. In the first two days, it is spread out in a very thin layer and frequently turned to ensure even drying. After the second day, the parchment layers start to enlarge to slow down the drying process. Parchment drying takes 8 to 10 days. After drying, the parchment coffee is stored in jute bags and sent for hulling at a processing plant in Huehuetenango.
