Jose Enrique Gutierrez belongs to the second generation of coffee growers. He is dedicated to the sustainable production of high-quality coffee. His family used to cultivate coffee in the eastern region of El Salvador, but due to low coffee prices and the civil war in the 1980s, they abandoned coffee cultivation. However, coffee remains Jose's passion, and when he bought his first farm in 2007, he did so with the idea of producing specialty-grade cherries.

The farm, named Finca Las Llantas, is named after car tires placed at the entrance, serving as chairs from which visitors can enjoy a magnificent view. Jose combines traditional agronomic knowledge with his own ideas for more sustainable practices. The specialty coffee market has provided him with a stable price, allowing him to expand his land and acquire additional farms. Today, all of his farms—San Jose, El Limo, Las Brisas, El Horno, and Los Cocos—focus on the production of specialty coffee.

Cherries are handpicked at the peak of ripeness and processed directly on the farm. Upon reception, workers visually sort and remove damaged, unripe, or overripe cherries. The cherries are then placed in airtight bags and sealed for 68 to 72 hours. The bags are stored in the shade to limit fermentation.

After fermentation, the cherries are transported to the El Carmen mill in Atacu, where they are dried on elevated beds. Workers frequently turn the cherries to ensure even drying. The drying process takes approximately 30 to 32 days.
