Nestor Lasso is part of a new generation of Colombian coffee producers who are reshaping the industry. He comes from the Huila region and, together with his partner Jhonathan Vergara, created the Peñas Blancas project — a coffee processing hub that serves not only their own farms but also a wide network of smallholder farmers in the surrounding area.
Nestor is more than a farmer; he is a systematic innovator. He continuously studies, refines protocols, and experiments with fermentation techniques. His processes are meticulously designed: he selects only the ripest cherries, which then undergo controlled fermentation. After fermentation, the coffee is slowly dried on raised beds — a process that can take 25 to 30 days. The final lots are stabilized at a controlled humidity level until they are ready for export.
