Behind this coffee are the Bayter brothers, who export coffee under the Forest Green Coffee brand and are leaders in modern approaches to fermentations, particularly in coffee drying. They approach drying with the same precision as roasters approach roasting. For drying their coffees, they use curves that precisely track the moisture reduction in the beans, allowing them to consistently repeat the drying process. This Pink Bourbon is one of the flagship coffees produced at El Vergel farm, located in a micro-locality next to the washing station and surrounded by Guava trees. Its profile is one of the most intense and fruity coffees in production. This lot comes from trees planted in 2016 and 2018, with a total of over 40,000 plants.
This coffee was processed using the Koji fermentation method, which involves adding A-Oryzae fungus spores to help obtain certain sugars that are not available during regular fermentation because natural microorganisms cannot break down these sugars.
For this specific lot, they conducted an initial 24-hour aerobic fermentation, followed by 38 hours of fermentation with Koji spores in thin layers on raised shaded beds at temperatures ranging from 22 to 29 degrees Celsius. This was followed by 22 days of shade drying on raised beds with temperature control below 32 degrees Celsius, ensuring optimal drying and improving the Koji fermentation process.
After drying was completed, the coffee was stabilized with dry parchment and mucilage for 30 days in Grain Pro bags before milling.
