With nearly 50 years of experience in coffee, Roberto is a walking encyclopedia of coffee—he simply knows everything about growing and preparing coffee. Thanks to his experience, closeness to nature and love for his homeland, Roberto has been a pioneer for decades in sustainable coffee cultivation in harmony with nature. Three years ago he founded a small family business together with his wife Doris and their five children. Right behind his house he now processes his own coffee in his micro-mill using a water-saving Ecopulper. All processes are measured and efficiently organized; nothing is left to chance. Right behind the processing facility they have a small cupping space and a beautifully arranged display case with samples. All lots are processed on raised beds, focusing exclusively on honey and natural processing. Beds and shading nets provide the necessary protection during the hottest parts of the day. To reach perfect moisture levels they use mechanical dryers to reduce the last percentages of moisture to the correct level for export.
All cherries are hand-picked at peak ripeness on the Las Nubes farm and carefully sorted to remove unripe or damaged fruit. To start fermentation, Roberto adds a measured amount of juice from previously pre-fermented cherries to the freshly picked whole cherries. This introduces an active community of lactic bacteria and yeasts into the batch, accelerating fermentation and increasing flavor complexity.
Cherries and juice are sealed in stainless steel tanks to create an oxygen-free environment. Over the next 72 hours lactic bacteria convert natural sugars into lactic acid, lowering the pH and creating creamy, fruity tones. Once the ideal pH is reached, the cherries are removed and dried in thin layers on raised African beds, where they are regularly turned to dry evenly until they reach 10–12% moisture.
The result is an intensely sweet, lively coffee with tropical fruit character, a silky texture and a clean milky finish—the hallmark of Roberto Mata’s lactic fermentation style.
