Most of the coffee in this varietal blend from two Brazilian regions is grown on larger farms equipped for mechanical harvesting and processing, which maximizes productivity. The relatively flat landscape in many Brazilian coffee regions combined with high minimum wages has led most farms to opt for this type of mechanical harvesting rather than selective manual picking.
In the past this mechanization meant strip harvesting was the norm; today’s mechanical harvesters are gentler on the plants, allowing farms to harvest only fully ripe cherries with each pass, which is good news for producers focused on specialty quality.
In many cases and on less even parts of farms a mixed form of manual and mechanized harvesting can be used, where ripe coffee is collected using a derricadeira—a kind of mechanized rake that uses vibration to harvest ripe cherries. A tarpaulin is stretched between the coffee trees to catch falling cherries. Olives are harvested in a similar way.
Thanks to these newer, more selective technologies, an increasing number of farms are becoming more interested in cup quality and are able to deliver it.
This coffee was selected for its simple flavor profile. It dries on large sunny terraces. The coffee is regularly raked and turned to ensure even drying and a clean cup profile.
